gluten free=junk

Xanthan Gum is made from the outer layer of a tiny, inactive bacterium called Xanthomonas campestris. It is an excellent all purpose thickener for dressings, gravies and sauces. It’s unique ability to hold small particles of food together makes it the ideal substitute for gluten in gluten-free baking. Most recipes call for only 1 or 2 teaspoons, so it goes a long way.

but it’s made of corn and so i thought that it is as bad as high fructose corn syrup.

    I’m not certain how to approach these sorts of issues but one thing that SEEMS to be true is that, while Xanthan Gum is DERIVED from glucose, it in an of itself is not a sugar and contains no sugar. Such as, hydrogen and oxygen are not water when separated, and other chemical compounds can contain hydrogen and oxygen and NOT be water. When you look at the nutritional facts of high fructose corn syrup vs. xanthan gum you’ll see that the corn syrup contains sugars while the xanthan gum does not. It is a polysaccharide and though while composed of sugar molecules, is not a sugar. So if the high-fructose SUGAR in corn syrup is the thing that is throwing you off, I would not worry as xanthan gum is technically not sugar. However, if you are trying to avoid corn products because you have a high allergy to corn, then you may want to avoid it as it is usually derived from corn and may have traces of corn in it. There are brands that apparently are “corn-free”, so you may want to check those out (since they can also be derived from wheat or soy).

    I may COMPLETELY be talking out of my ass though and am not any sort of expert or professional whatsoever. I thought I would attempt to educate myself and try and help. There seem to be no definite answers on this, so I had to piece together a bunch of information.

      i am actually really high allergy to gluten(wheat) and dairy, i cried with lots of tears each time i have them carelessly like going celebration with the elderly in chinese restaurants, i think i better eat no corn and soy and nuts too from now on, becuz they are bad, aren’t they?:)
